- 1 cup mayonnaise
- 1/3 cup whole milk
- 4 teaspoons finely minced fresh cilantro
- 2 teaspoons lime juice
- 1 teaspoon white vinegar
- 1 teaspoon granulated sugar
- 1 teaspoon finely minced garlic
- 1 teaspoon finely minced onion
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon ground cumin
Directions
1. Whisk together all the ingredients in a medium bowl. Cover and chill until ready to be served.

OMG! I love this dressing. I use Swerve for the sugar to keep it low carb. I’m obsessed.
NOT EVEN CLOSE!!!!! I followed this recipe down to the T and it taste like glorified mayo….IT’S NOT EVEN GREEN LIKE IN THEIR PHOTO! Mines came out white with a very very faint green tinge! I will have to try and doctor it up to make it servable/edible.
I made this. It was good but did not taste like El Pollo Luco
I first had this dressing when I lived in San Diego, years ago, and I loved it! I recently moved to Texas and am very happy to find El Pollo Loco here! And I’m even happier to find this recipe! I’m making it today!
Followed recipe to the T.. no flavor. Tweaked it until it tasted similar. Added way more cilantro, tad more cumin and cayenne pepper, lime juice, onions, garlic as well as throwing in Half a jalapeño. Sooo much better. I think 3/4 cup mayo would’ve been fine as well as less milk. Basically altered the whole recipe, ?
It does not taste the same. I think they use buttermilk instead of regular milk
I use to work at El Pollo Loco 20 years ago. I swear the dressing was just caesar salad dressing with cilantro blended in.
I used a hand full of fresh cilantro. I’ll wait until the next day for taste………..
